Karli's Tuscan Chicken & Bean Soup!!

  • 1 Whole Chicken (rinsed well)
  1. Place in large stock pot with the following:
    • 1 Gallon/16 Cups of Water
    • 1 T Italian Seasoning
    • 2 T Minced Garlic
    • 1 T Poultry Seasoning
    • 2 t Sage
    • Salt & Pepper
  • Boil until chicken is cooked – approximately 35-40 minutes
  • Once chicken is cooked remove from stock and let cool
  • Taking the remaining chicken stock strain it well several times
  • Reserving 3 1/2 quarts/14 cups, return it to the large stock pot

Add the following to the stock pot:

  • 2 1/2 Quarts/14 Cups Chicken Stock
  • 1/4 Large Onion diced
  • 1 Can Kidney Beans (drained and rinsed)
  • 1 Can Garbanzo Bean (drained and rinsed)
  • 1 Cup Mushrooms
  • 1/2 Cup Sun Dried Tomatoes
  • 1 Can Italian Seasoned Tomato Paste
  1. Let cook for 10 minutes and once chicken is cooled put the meat in the pot
  2. Season with Salt and Pepper to taste
