Karli's Low Fat Zucchini Bread!!

  • 3 Eggs
  • 1 Cup Applesauce
  • 2 Cups Sugar
  • 2 t Vanilla
  • 2 Cups Zucchini (thinly diced)
  • 1 Cup Drained Crushed Pineapple
  • 3 Cups Flour
  •  2 t Baking Soda
  • 1 t Salt
  •  1/2 t Baking Powder
  •  1 1/2 t Cinnamon
  • 3/4 t Nutmeg
  • 1 Cup Chopped Nuts (preferably Pecans or Walnuts)
  1. Preheat Oven 350 degrees
  2. Combine Eggs, Applesauce, Sugar and Vanilla in mixer and mix until well blended.
  3. Once wet ingredients are mixed well, add Zucchini and Crushed Pineapple, mix well
  4. In a separate bowl combine all dry ingredients: Flour, Baking Soda, Salt, Baking Powder, Cinnamon and Nutmeg mix well.
  5. Little by little add the dry ingredients into the wet mixture. Once the mixture is complete and very well blended add in the nuts and mix one final time.
  6. Spray 2–5×9 Bread Pans with non-stick spray and bake 45-50 minutes or until toothpick is inserted and comes out clean
