Karli's Caprese Quinoa!!

  • 2 Cups Uncooked Quinoa
  • 1 1/2 t Minced Garlic
  • 2 Cups diced fresh tomatoes
  • 1/4 Cup Olive Oil
  • 1 1/2 t Italian Seasoning
  • 3 T Balsamic Vinegar
  • 1 t Kosher Salt
  •  1/4 t Ground Black Pepper
  • 1/4 Cup Shredded Mozzarella Cheese
  • Fresh Basil Leaves
  1. Cook Quinoa according to instructions making sure it remains al dente
  2. Drain and set out to cool
  3. Dice tomatoes and combine with quinoa
  4. Combine tomatoes and quinoa with the spices, oil and vinegar listed above
  5. Once all ingredients are mixed well add the mozzarella and basil
  6. Put in refrigerator until ready to serve

Makes 8-10 servings
